It's a bit of a weird situation, and it all depends on how your COS date lines up with your school starting date.

Not having COSed yet I don't know the exact range of weeks, but normally you can leave some number of weeks before your COS date and still COS normally. If, however, this still doesn't line up with your schools start date, you'll have a choice to make. You can ET, and leave Peace Corps without having "completed" your service. You'll still get (most of) your money, but you don't have that warm fuzzy feeling... or you can complete your service and start grad school a semester (quarter?) later than you normally would.

It is a difficult situation to be in, but you won't be the first in it.
